The data—analysed in CGA’s 2021 Food Insights Report shows that nearly half (49%) of consumers typically order desserts when eating out—more than the number ordering starters (40%). Numbers choosing desserts peak at 55% among the 25 to 34 age group.
The research uncovers the potential to encourage even more diners to order desserts. More than four in five (84%) say they could be influenced to buy one more often, with value for money, new options and desserts they can’t recreate at home among the top drivers. There is scope to upsell desserts too, as nearly a third (30%) of consumers say they are willing to upgrade their order when eating out.

It also highlights the significant opportunities for operators and suppliers to drive sales even higher—especially among consumers who want to treat themselves over the long Jubilee weekend. To take advantage, they need an in-depth understanding of habits and preferences, and a sharp focus on value for money at a time when many people’s disposable income is being squeezed.”

Set desserts—including British classics like trifle—accounted for 12% of all dessert sales in the first quarter of 2022, selling an average of 83 units per week in Britain’s restaurants.
