Food Insights Report shows how to build menus for mindful consumers

Consumers like the idea of trying new food and drink trends, with over half agreeing that they actively engage with trends in the Out-Of-Home. Top trends capturing consumer attention in the 2025 Food Insights report include chopped sandwiches, Lousianian dishes like seafood boils and Po Boys, and Japanese cream fruit sandwiches. 

 

Value for money remains forefront for consumers deciding where to eat in the Out-Of-Home channel, increasing by 5pp (percentage points) compared to last year’s report. Good quality ingredients rank highly in the decision-making process as well as hold high influence in determining a dish’s authenticity.  

 

As emerging cuisines continue to gain prominence in the British market, it’s encouraging to see consumers not only eager to try new flavor profiles but also willing to pay a premium for dishes perceived as authentic. This highlights the importance of authenticity in capturing consumer interest and delivering a standout dining experience. 

 

Half of British consumers say that they could be encouraged to try emerging cuisines if they had the opportunity to sample it, this followed by a willingness to try new cuisines if they are recommended to them.  

 

The exclusive Food Insights 2025 report draws on an in-depth survey of 2,000 nationally representative consumers to deliver actionable insights into emerging menu trends, global cuisines, authenticity and much more. It also analyses crucial shifts in the channels, occasions, times and spends of On Premise visits.
