With operators here contemplating the impact of the National Living Wage next year, a new survey in the US by AlixPartners has found that consumers approve of better wages, with many prepared to pay extra to support them.
The poll of around 1,000 people found that 51% of consumers endorsed campaigns for better pay in the restaurant sector, with 63% of them prepared to pay more for menu items to help them be introduced.
AlixPartners’ survey also revealed a majority of 65% against the idea of restaurants replacing tipping with a service charge. Other likely trends for 2016 include heavy investment in technology and more demand for healthier eating options and delivery.
